Tamari Marinated Salmon


1lb fresh salmon 生サーモン 450g

1 teaspoon salt 塩 小さじ1

¼ cup plus 2 tablespoons tamari soy sauce 溜まり醤油90cc

1 tablespoon mirin みりん大さじ1

1 teaspoon garlic grated にんにくすりおろし小さじ1

2 teaspoon ginger grated 生姜 小さじ2

¼ red onion, sliced 赤タマネギスライス 20g

1 cup mixed micro-greens and sprouts カイワレ

1.     Sprinkle salmon with salt and let rest 10 minutes. Pat dry to remove any fishiness.

2.     In a container combine tamari, garlic and ginger and marinate salmon for 6 hours or overnight.

3.     Preheat the oven to 450°F. Soak red onion and micro greens in ice-cold water for 15 minuets and drain well.

4.     Grill salmon or bake in oven for 8 minutes until nice and golden.

5.     Top with onions and micro-greens. Serve with rice and a glass of fruit-driven Pinot Noir, or a medium-bodied slightly sweet sake.
